Indulge in a culinary journey where each course showcases the earthy elegance of locally foraged mushrooms, expertly paired with our estate wines. About our Chefs, Erick Caballero & Alex Graham:
Chef Erick has a strong passion for working with local mushrooms and highlighting them in thoughtful, creative ways. Oregon's incredible mushroom variety and accessibility were actually one of the main reasons he made the move from Idaho, the abundance, variety and quality here are truly inspiring.
He and Chef Alex both previously worked at Joel Palmer House, where they gained hands-on experience in mushroom focused cuisine and refined their technique. Erick continues to study and experiment with mushrooms, respecting each ingredient while incorporating both French and Latin influence into his cooking.
